Sundays are usually reserved for family dinners, whether they are with my parents, my husband's family, or just my immediate family. If you have this tradition too does that mean you cannot participate in family dinners? No, it just means it requires a little more thought and planning. I always ensure that there's a salad wherever I'm headed, if not, I bring my own. I've now even started bringing my own dressing because I just prefer the Yogurt Lite Ranch over other kinds. For example, last night there were mashed potatoes and pork roast. It's all about serving sizes. I make sure to do only a 1/2 cup of potatoes and 3 oz. of roast. My mother-in-law also had broccoli so I had plenty of veggies and in fact, was stuffed afterwards. If you're the one that's cooking implement applesauce instead of oil and margarine instead of butter. Many times, I still cut the margarine in half or don't include it all.
Last night we went out and rode horses at my mother-in-law's and then stayed for dinner. It was a great night. I hope all of you had a great weekend!
