Yesterday I had the best lunch...believe it or not it was at Ruby Tuesday's!  i usually try to eat at local, non-chain restaurants but it was quick and easy to meet my friend there and then take the kids to a train display right down the street.  I was quite impressed with the selection Ruby Tuesday's had.  There were plenty of fresh veggies as sides as well as a lot of "mini" dishes such as turkey burgers and many entrees had the calories next to them as well.  I couldn't decide because I wanted all of the sides - fresh zucchini, grilled broccoli, snapped peas, asparagus but the one that really caught my eye was spaghetti squash!  I think fabulousfoods.com quotes spaghetti squash best when they wrote, A dieter's dream, a four-ounce serving of spaghetti squash has only 37 calories."  Here's a quick and easy way to cook it:

Microwave It -- Cut squash in half lengthwise; remove seeds. Place squash cut sides up in a microwave dish with 1/4 cup water. Cover with plastic wrap and cook on high for 10 to 12 minutes, depending on size of squash. Add more cooking time if necessary. Let stand covered, for 5 minutes. With fork "comb" out the strands. It's really delicious and considered a "free" for Jenny Craig!

Approx. 3 oz. of grilled chicken

Approx. 1/2 cup mashed potatoes

2 Rum and Diet Cokes
